Cheffing it up!

Call me old fashion but I love to write down all my recipes in my trusty purple notebook.Here are some of my favorite!

Blueberry muffins

Ingredients

-1/2 cup softened butter

-1 1/4 cups sugar

-2 eggs

-1 teaspoon vanilla extract

-2 cup flour

-1/2 teaspoon salt

-2 teaspoons baking powder

-1/2 cup milk

-2 cups blueberries

Preheat oven to 375 degree Farhenheit.Mix butter and sugar. Add the eggs, one at a time, beating well after each addition.Add the vanilla extract. Sift together the flour, salt, and baking powder and then add to creamed mixture. Crush 1/2 cup blueberries with a fork,and mix into batter. Fol in the remaining blueberries. Line a 12 cup muffin tin. Add batter and pop muffins in the oven for about 30 minutes. While you wait for the muffins pour 1 cups of milk in a small bowl. Add 2 spoons of brown sugar, then stir. When the muffins come out the oven and finish cooling, use a brush to brush a thin layer of the liquid on the muffins.Then ENJOY with a nice glass of milk :)

Cheese and Spinach Stuffed Chicken

Ingredients

-2 chicken breats halves

-2 cloves garlic

-1 lime, zested

salt

black pepper

-1/2 cup sun-dried tomato

-1 cup spinach leaves

-5 ounces mozzarella, cut into strips

Mash the garlic with lime zest, salt and pepper until it becomes a paste. Buttwefly the chicken breast and add garlic paste. Add the sun-dried tomatoes, mozzarella cheese and spinach(rub it on the chicken).Close and seal with toothpicks. Rub more garlic paste onto outside of the chicken. In a nonstick frying pan, add olive oil. Cook the chicken for about 8 minutes on each side, until done. (For me I like to pair it with some white rice or even pasta but it's totally up to you:)

Blondies

Ingredients

3/4 cup unsalted butter(melted and slightly cooled)

1 cup light brown sugar

3/4 cup granulated sugar

2 large eggs(room temperature)

2 teaspoons pure vanilla extract

2 cups all purpose flour

1 teaspoon baling powder

1/2 teaspoon salt

1 cup white chocolate chips(optional)

Preheat oven to 35o degrees fahrenheit. Line a 9 by 13 baking pan with parachment paper. In a large mixing bowl, whisk together the melted butter, brown sugar, and gradulated sugar until well combined. Whisk in the eggs and vanilla extract until full combined. Add the flour, baking powder, and salt and mix until just combined, then fold in the white chocolate chips. Scoop the batter into the prepared 9 by 13 pan and spread it out evenly. Bake at 350 degrees fahrenheit for about 30 minutes or until the top is set and lightly browned. Remove from oven and allow to cool before cutting

Note:To get room temperature eggs, put in a bowl of warm water for 5-10 minutes
